Authentic Mardin Stuffed Onions

Mardin style stuffed onions, known as Soğan Dolması, feature tender layers of onion wrapped around ground beef, rice, and a fragrant spice blend, all slow-cooked in a rich garlic tomato sauce. Ready in about 85 minutes from start to finish, this dish delivers a deep balance of savory meat and tangy pomegranate molasses.

This version draws directly from authentic Mardin home cooking, where rich ground beef meets bright sumac and pomegranate molasses. Unlike standard stuffed vegetable recipes that rely heavily on rice, this preparation uses a meat-forward ratio that holds its structure during baking.

The secret to seamless rolling is parboiling the scored onions for 15 minutes before separating. Cook them just enough to soften the membranes without turning the outer layers mushy, which prevents tearing when you pack in the filling.

This Mardin-style stuffed onion recipe layers rich ground beef, herbs, and tangy pomegranate molasses inside soft onion petals. Baked under a rich garlic-butter tomato sauce, it delivers deep regional Turkish flavor in under an hour of active cooking.

Ingredients

  • For the Onions & Filling:
  • 4-5 large yellow onions

  • 400g ground beef

  • 6 tbsp rice, washed

  • 1/2 bunch fresh parsley, chopped

  • 1 tsp tomato paste

  • 1 tbsp pepper paste

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1 tsp red pepper flakes

  • 1 tsp paprika

  • 1 tsp dried mint

  • 1 tsp sumac

  • 1 tsp cumin

  • 1 pinch allspice

  • 5 tbsp pomegranate molasses

  • 1/2 cup olive oil

  • For the Sauce:
  • 2 tbsp butter

  • 1 tsp tomato paste

  • 1 tsp pepper paste

  • 3 cloves garlic, minced

  • 2.5 cups water (500 ml)

  • Salt, to taste

Directions

  • Prep the Onions: Peel the onions and slice off the top stem ends flat. Make a vertical cut straight to the center core of each onion. Boil in a pot of water with the lid partially on for 15 minutes, then drain and set aside to cool.
  • Prepare the Filling: Carefully separate the cooled onion layers into individual petals, peeling away the thin inner skins where possible. Finely dice the small leftover center cores. In a mixing bowl, combine the diced core onions, ground beef, washed rice, parsley, pastes, dry spices, pomegranate molasses, and olive oil, kneading well until combined.
  • Assemble: Lay an onion leaf flat, place roughly 1 tablespoon of filling inside, and roll tightly. Arrange the rolls seam-side down in a baking dish or pot so they fit snugly without large gaps.
  • Make the Sauce & Cook: Melt butter in a skillet over medium heat, sauteing the garlic, tomato paste, and pepper paste until fragrant. Pour in the water and salt, bring to a boil, then pour evenly over the arranged stuffed onions. Cover tightly with a lid or damp parchment paper and bake in a preheated oven at 200°C (400°F) for 45–50 minutes. Uncover and bake for an additional 20 minutes until the tops are browned. Serve warm with yogurt.

FAQ

How do you keep the onion rolls from unraveling while baking?

Packing the rolls tightly in the baking dish with their seam sides facing downward keeps them secured. Using a snug arrangement prevents the boiling liquid from lifting the edges and unrolling the meat filling.

What is the best way to peel onion layers without tearing them?

Simmering the whole scored onions for 15 minutes softens the sulfur compounds and tough fibers. Once cooled, gently sliding your thumb under each layer removes the paper-thin inner membrane that usually causes ripping.

Can you prepare stuffed onions ahead of time?

You can assemble the rolls and arrange them in your baking dish a day before cooking. Keep the dish tightly wrapped in the refrigerator and wait to pour the warm butter-garlic sauce over the top until right before baking.

Why does Mardin style dolma use pomegranate molasses in the filling?

Pomegranate molasses provides a deep sour accent that cuts through the fat of the ground beef. It balances the warm allspice and cumin while keeping the meat mix moist during the long bake.

How do you know when the center rice is fully cooked?

The rice is done when the onions yield easily to a fork and the sauce has reduced slightly. Uncovering the dish for the final 20 minutes crisp-roasts the outer onion skins while finishing the interior steam cook.
